We are finally going to move our furniture back into our dining room tonight, so I am hoping that by tomorrow we will actually be able to eat at at real table. Dinners will also be so much easier to cook without extra furniture shoved into my kitchen! I'm so excited to be in the makeover home stretch! We have lots of exciting things coming up, so I figure we need to start with some healthy dinners to get us off on the right foot! Leftovers for lunches would be a plus too!
Menu Plan Jan 28-Feb 3
Monday 1/28 - Duck egg quiche with whole wheat crust with creamy zucchini soup (eggs, milk, and zucchini are all from right here at Green Eggs & Goats)
Tuesday 1/29 - Grilled pork chops with creamed kale & sweet potato puree (kale, cream & sweet potatoes are homegrown!)
Wednesday 1/30 - Buffalo Chicken Chili Mac - I really love this stuff, but I have to make it a little mild for the kiddos, so I just add more hot sauce to mine on my plate!
Thursday 1/31 - Meatloaf with mashed potatoes and roasted broccoli (meatloaf to be topped with homemade canned tomato sauce)
Friday 2/1 - Whole wheat pizza with homemade mozzarella
Saturday 2/2 - Chicken burritos with cheese, sour cream, pickled banana peppers, brown rice and orca beans (peppers and beans are homegrown and I will try my hand at making my own sour cream!)
Sunday 2/3 - Chili with Fritos, cheese, and sour cream (sour cream and beans leftover from Saturday, home canned tomatoes & tomato sauce in chili)
