White Bean Chicken Chili

This is a delicious way to use up leftover chicken!
Ingredients
  • 1 pound dry white beans
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 jalapeƱo, chopped
  • 3 cloves garlic, chopped or grated
  • 2-3 cups cooked, chopped chicken or turkey
  • 2 quarts chicken or turkey broth
  • 1 tablespoon cumin
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons salt
Instructions
  1. Rinse dry beans well and place in a pot. Cover with boiling water and allow to soak for 1 hour.
  2. Drain and rinse beans, set aside.
  3. In a large pot, render bacon over medium high heat until almost crispy.
  4. Add onion and peppers to pot and cook 2-3 minutes, until soft.
  5. Add garlic and cook for about 30 seconds.
  6. Add beans, chicken, broth and seasonings and bring to a simmer.
  7. Simmer 2 hours or until beans are very tender. Add more broth or water if needed.
  8. Add salt in the last 15 minutes of cooking time.
  9. Check for seasoning and adjust if necessary.
  10. Serve chili with your favorite toppings. We like cheese and sour cream!
